100 days Village only world, or buome specific only world
Ocean only world,
•survive only IN the nether without going to over world for anything, there are some mods that spawn you in the nether
•flat only world!😮😮
Survival island, where you MUST stay on that island and can't travel to other biomes or strunctures aside from caves, end portal, etc.
Bedrock?! I've seen a lot of people switch from java to bedrock and note just how the mechanics are different. If you do try bedrock, get prizma shaders and actions and stuff, HIGHLY recommend! Prizma is THE best shader/texture pack I've ever had!

I think you should try out vanilla progression. it's where it forces you to complete tasks and achievements before allowing you to upgrade tools, armor, trade, enchanting, etc! Gives you the nostalgia of old minecraft where you don't rush to do anything! ❤
Maybe try out the create mod? Or try out mods that give you a hard challenge like natural disasters,
