I was waiting for day of the tentacle. It had the whole Maniac Mansion game to play in it.
Its sad you didn't mention one of the older and more impressive examples for the time; Day of the Tentacle, an adventure game by Lucasarts; Ingame you could find a 100% working version of Manaic Mansion (the game it was technically a sequel to) on a computer to play fully. It was great
In the game Day of the tentacle (1993), a sequel to maniac mansion, you can play the whole maniac mansion on a computer in Ed Edisons room.
It’s not easy to access, but in Mortal Kombat 3 and Ultimate Mortal Kombat 3, there is Rellim Ohcanep, a realm where you can play Galaga.
The Fallout games have had ones hidden in them for a good while. New Vegas had all the gambling tables, and 4 includes the many different tapes you can find, such as Atomic Command or Pipfall.
Warframe has a ton of games in it, a fighting game, 90s side scroller, bullet hell, flappy bird, and probably a few I’m forgetting
It is not completely in the same vain as the games in the videos, but I specifically bought Castlevania: The Dracula X Chronicles for the PSP to play Castlevania: Rondo of Blood up to the point, that I had unlocked Castlevania: Symphony of the Night, so I could play that in full.
A game within a game? That is nothing, the game Gwent has an whole different game outside of it, when you quit the game. You take on the role of the Gwent player, Gerland, Gerald or something and then you go on your quest to collect more Gwent cards. But there are many other side activities, like killing monsters and solving cases. Usually both.
Missed all of the Yakuza serries which included full games from Sega classic arcades located in Sega arcades scattered around.

I didn't know that was the result of the Nuketown easter egg in BO2! I thought BO2 had the version where the mannequins start chasing you. Speaking of Black Ops, I'm sure it's featured on one of your lists before, but Black Ops 1 had the main menu easter egg where you could get up out of the chair and walk over to a computer, wherein there was a fully playable version of 1980 text adventure Zork.
Did anyone talk about the fully playable DOS version of Maniac Mansion inside of of LucasArts's Day of the Tentacle yet?
I'm quite fond of being able to play the original Prince of Persia in Prince of Persia: Sands of Time. A cool little Easter Egg if you break down a certain wall about midway through the game
Thrillville and its sequal was a theme park builder for the Wii thats main feature was the ability to run around your park in third person mode and interact with guests and the rides you build. It contained multiple arcades you could build that had fully fledged arcade games in them you could play they all had multiple levels and bosses. I remember spending hours as a kid just playing the arcade games instead of actually building the park.
